Who doesn’t love chicken nuggets? Most kids I know love them, my daughter included. However, I don’t love all the extra stuff that tends to come with store bought and especially fast food nuggets, meaning extra ingredients and rough animal treatment. So I make my own, and it’s so simple! You cook chicken, shred it, mix in mayo, and bake. Easy.
I start out with good quality chicken breasts or thighs (raised humanely) and good quality mayo. I used to make my own mayo from real foods for a short time, then I came across a brand of mayo that I really love, Primal Kitchen. They make their mayo with avocado oil rather than vegetable, soybean or canola. This makes me so happy. I am quite new to cooking, so pre-made store bought products that have awesome ingredients are amazing finds for me! I feel safe giving this mayo to my daughter. Here’s how I make our Easy Paleo Homemade Chicken Nuggets.
Ingredients
- 1 lb good quality chicken, breasts or thighs
- Primal Kitchen mayo
Directions
- Boil chicken until thoroughly cooked.
- Preheat oven to 350°
- Shred cooked chicken in a food processor. (I LOVE my Ninja!)
- Add a few (3-5) tablespoons of Primal Kitchen mayo. Mix thoroughly.
- Spoon out nuggets on a baking sheet. (Life Hack: Place parchment paper on the baking sheet and put nuggets on that. Much easier for cleanup.)
- Bake for about 35 minutes.
Another Life Hack: Cook in bulk. Freeze what you don’t eat. Then you have easy go-to meals when you don’t feel like cooking.
I play with the amount of mayo I add and the amount of time I bake the nuggets. Even when I end up with drier nuggets that fall apart a little bit, they’re still tasty and we still “eat it up like a pup”! (Heard this phrase so much growing up from my Papa Wayne!)

I use 1 lb of chicken and about 4-5 tablespoons of mayo. (If you like it with more mayo, you’d just need to cook it a little longer. Less mayo, less cook time, but it’s more likely to not hold together as well.)
